Monastery stew

When, in 1918, he visited the Ratesti Monastery, Nicolae Iorga admired the cell-houses of the 60 nuns, writing that, instead, he felt "like in an air station": the guests saw more than the sisters, and some the houses looked like new-style villas. If today the historian were to reach the monastery hidden between the hills of Buzau, he would be saddened to see it in its current state, after the landslides in recent years. The old church, painted by Nicolae Teodorescu and his nephew, the great Gheorghe Tattarescu, needs serious consolidation and restoration interventions. But there are some landmarks in Ratesti that have remained as in Iorga's time. Between them and the recipe of the nuns. Years ago from Mother Domitian, we found out the recipe for the Monastery Stew.

You will need: 4 pumpkins, 4 onions, 4 carrots, 4 peppers, 4 tomatoes (as 4 are the evangelists), a bunch of dill, a bunch of optional green parsley: oil (for frying).

How to prepare bean stew (bean meal, bean meal):

beans it is chosen and washed in some water, until the water remains clean. If you don't have a pressure cooker, I recommend soaking the beans in water overnight - they will boil faster. It counts beans boil it in warm water (it will boil faster). After boiling, leave for 5 minutes and then drain the water and add another hot water. Change the water 3-4 times, this way it will produce less gas.

How to prepare bean stew with smoked ribs:

Cut the bacon into cubes and fry in a pan with 1 tablespoon of oil. After browning well on all sides, remove and place on a plate.

In the oil left in the pan, fry the finely chopped onion and pepper, preferably julienne or diced.

After they have hardened, add the canned beans, after you have drained them of the canned juice and rinsed them well with cold water.

Then add the tomato juice and finely chopped garlic.

Season with salt, pepper, thyme and oregano and simmer for about 8-10 minutes, stirring lightly 2-3 times.

Towards the end, add the bacon and the green chives, keep them on the fire for another 1 minute and the food is ready.

2 canned beans (400 gr)
1 bottle of Heinz BBQ sauce (250 ml)
1 onion
2 cloves garlic
2 was dafin
2 thyme threads (or 1/2 teaspoon dried thyme)
1-2 tablespoons lemon juice
2 tablespoons oil
a few sprigs of parsley
pepper, salt

Preparation Fast bean stew

  1. Fry finely chopped onions in hot oil. When softened, add the crushed garlic. Cook for another minute.
  2. Add the BBQ sauce and water (or beer, if not fasting) as it enters the sauce bottle. Add the bay leaf, thyme, a little pepper and lemon juice. Boil over medium heat for 10-15 minutes.
  3. Add the drained beans (but not very well, leave a little liquid) and cook for another 5 minutes.
  4. Sprinkle with chopped parsley. He likes salt.

Ingredients Pea stalks (Erwtensoep)

300 gr kaizer
4 potatoes
1 leek
2-3 slices of celery root
1 small onion
3 cloves garlic
2 bay leaves
500 gr peas (I put canned food, it can also be used fresh or frozen)
salt, pepper, paprika

Preparation Pea (Erwtensoep)

  1. Cut the kaizer into slices, clean the onion and grow it in 4. Put 1 liter of water in a pot and add the kaizer, onion, garlic and bay leaf. Let it boil on medium heat for 20-30 minutes
  2. When the kaizer is boiled, remove from the soup and toss the onion, garlic and bay leaf.
  3. Meanwhile, clean the vegetables and cut the potatoes and celery into cubes, the leeks into rounds. Put these vegetables in the remaining soup and cook for another 20 minutes.
  4. Boiled kaizer is cut into smaller slices or cubes.
  5. When the vegetables are cooked, drain the soup. Don't throw away the soup, you should have about a cup of soup left. The vegetables are pureed.
  6. Put the puree again in the pot, season with salt, pepper and paprika and bring to a boil over low to medium heat. Slowly add the soup to the puree, stirring constantly. It takes about 5 minutes.
  7. Drain the peas.
    * If you make it with fresh peas, after removing the vegetables from the soup, boil the peas, add a little more water and let them boil. Then drain the peas and continue the recipe normally.
  8. Add the peas and kaizer to the food and let it boil.
  9. Serve as such or with fried sausages. Good appetite!

5. Slowly pour the soup into the puree

7. Pea stew & # 40Erwtensoep & # 41

Except for that 98% of the text (when boiling the beans). I have a problem: how to stop the beans from boiling so they don't crumble: to put it under a stream of cold water, to put vinegar. ?

Ioana 7 years ago - March 20, 2013 11:05

Re: Bean stew

98% even refer to the fact that the beans must be boiled, but not to the point where they start to crack.
so that it doesn't break when boiled, I always soften the beans the night before, boil it over low heat (so that the water doesn't boil hard), mix it a few times to boil it evenly. but it is just as important to check it often so as to "catch" it even when it is boiled, but the grain is still firm. and be careful not to boil beans from different sources / seasons, even if they are of the same variety.
the only time my beans disintegrated was when I didn't soak them. I made beaten beans from it

my answer to your dilemma is "balance." Re: Bean stew

Hi Ioana. Do you think it would be wise in step 3, after draining the beans and mute the ciolan to pour over them the water in which the ciolan boiled? I think it would give a more smoky taste to yahna. Or am I wrong and a disaster is coming?

Ioana 12 minutes ago - June 8, 2020 11:26

Re: Bean stew

Of course, you taste the water on the stove and depending on the intensity of the taste you can use that water or part of it. the idea is that that water can taste very intense smoke (especially if the ciolan is homemade). that's why I prefer not to use that water but to put it fresh, it will still taste smoky while the ciolan with beans will continue to boil. it will also leave enough gelatin in the water to naturally thicken the water.

Method of preparation

The beans are chosen, washed well, left to soak for a few hours, then scalded and changed two to three times the water in which it boiled. In the last water add the chopped vegetables, bay leaves, salt, pepper. , thyme, basil to taste and simmer. I use the pressure cooker.
Separately, the tomatoes, tomato juice, tomato paste or broth are smothered with 2-3 tablespoons of oil. flavor with chopped parsley, dill or tarragon to taste.

When both the beans and the vegetables are cooked, add the sauce, season with salt, spices and cook until the desired consistency is obtained.
It is served cold or hot as such with a good pickle or when it is not fasting as a garnish for steak, sausages, smoked meat, boiled meat.

In the meantime, the nuns from Varatec came to visit and brought me a few kilograms of beans with a very large grain, the grains have all the colors, and the food came out very, very tasty. I am posting for you a photo with Varatec beans.

How to make a beaten bean recipe?

The beans are chosen, washed in some water and boiled. It can be soaked in cold water in the evening and will boil faster the next day & # 128578

Some tricks for boiling beans:

-to let it boil, add 1 teaspoon of baking soda and let it boil for 10 minutes, then throw in the water (it will boil faster and will not cause me to bloat and gas too hard)

-to let it boil and after it boils for 10 minutes, discard the water, fill it with hot water and let it boil, repeat the throwing of the water 3 times

-boil 1 potato in shell, well washed, which is removed and thrown away, when the beans are cooked (it will no longer cause gas and bloating)

-water that changes, must always be hot, not cold

-buy a pressure cooker, they are not expensive and they are well worth the investment

When the beans are half cooked (take a tablespoon of beans and blow over it, if & bdquoflowers & rdquo, ie the skin is loose, it's good), add the cleaned vegetables and cut into large pieces, like soup (onion, carrot, celery, parsley root ).

You can also put 1 bell pepper, I didn't have it now.

Bring to a boil until the vegetables are well penetrated. Strain the vegetables well into the juice, but keep a cup of this juice.

Mix vigorously, using a fork or a wooden spoon, like mayonnaise, gradually adding the oil.

If the pasta is too hard, add a little more of the juice in which they cooked the vegetables. It must be like a puree (this is a vegetable puree).

Make the onion sauce for the beaten beans separately:

Cut the onion into slices or cubes and place in a pan with 2 tablespoons oil and 2 tablespoons water.

Simmer over low heat, adding a little water from time to time, until the onion is soaked.

At the end, add salt and broth or tomatoes and cook for a few more minutes, to bind & # 128578

How to serve the recipe for beaten beans or rubbed beans:

-Put the beans on a plate, bowl, plate and put the onion sauce on top.
