The author gives her advice for simplifying your Christmas cooking
Kim McCosker is known for her four-ingredient series, but in her newest book she tackles a holiday that few go minimal for: Christmas. In 4 Ingredients Christmas, McCosker tries to keep up the festivity and excitement without breaking the bank. For her, the reason to rethink is simple: "The average household takes until the following year in May to get their Christmas-incurred credit card under control." Her book aims to prove that you can have your Christmas cake and eat it too — by simplifying recipes she hopes to not only save her readers time, but by reducing the number of ingredients they will inevitably save money. She points out that "Some of [the recipes] are only two ingredients!"

The woman behind the famous 4 ingredients cook books, is now branching out to help those with food intolerance's.
Kim McCosker has already released 33 cook books under her 4 ingredients banner.
Her latest addition is her gluten free, lactose free book – after a huge demand from followers.
A Current Affair spent a day with the queen of simple cooking, learning some new recipe's.
"We have over 750 thousand followers on facebook and every time i post a recipe, the first question i get is, is it gluten free." Mrs McCosker said.
So Kim listened to the calls for help and started to do her research. She found around one research which shows, one in 70 people have coeliac disease, with a huge 80 percent of those undiagnosed.
Coeliac disease is when your immune system reacts abnormally to gluten, and can cause bowel damage.
Kim realised there was a hole in the market for quick, simple recipe's that helped people with intolerances.
"I thought gluten free was a little bit of a fad, but i honestly believe it's not just plateauing, it is increasing in interest." She told A Current Affair.
Kim first released a gluten free 4 ingredients cook book 10 years ago, when ingredients like quinoa and kale didn't exist. She claims now it's even easier to eat guten and lactose free.
The new book includes more than 70 recipes’ all with just 4 ingredients.
While A Current Affair was with Kim, she whipped up a simple chicken satay, using just curry paste, peanut butter, coconut cream and chicken.
"Anyone could do that, and you know what, you don't need to be coeliac, you don't need to have any intolerances, it's just easy everyday food, for everyone.

Transform the humble sandwich into a lunch box favorite. Note: Bacteria grows rapidly within the temperature range of 40 degrees F to 140 degrees F, so it’s always smart to add ice packs to a lunch box, placing them near the food meant to be kept cold.
Every time I see this photo, it makes me smile. Isn’t food just wonderful? It allows us to be so creative, easily turning a staple meatloaf into gorgeous cupcakes. The options are endless, but some of my favorite smuggling ideas are finely chopped celery, onion, grated carrot and beets with seasoned fresh thyme. What’s smuggling? Sneaking veggies into foods, undetected by kids.

How often do you find a recipe that sounds healthy and delicious, only to find that it will take much more effort to make than you can spare on some days or nights? Luckily, the solution to your situation can be found in 4 Ingredients Kids, by Kim McCosker. This cookbook of 80 recipes makes life easy on adults, and fun for kids.
Kim takes meal making to new levels &mdash as in, her recipes are made with just four ingredients (or fewer). Kim shows that teaching kids to eat well doesn’t have to be a chore &mdash or unhealthy. She acknowledges that a child’s take on healthy meals begins at home. So not only are these recipes good for your family, but they’re easy enough to get kids involved in helping to prepare them. And when kids are more involved with their meals, they take more interest in them.
Through the pages of recipes that include sections for breakfast, lunch, snacks, dinner and dessert, you’ll also find tips on kitchen safety, optional additions to dishes, info on healthy eating habits and even advice on how to “smuggle” more veggies into many of these dishes.
Full-page, vibrant photos accompany each recipe in this book to entice you. You’ll be excited to work your way through the pages of these fun recipes. Don’t forget to check the back of the book for a section on party ideas and games.
