The author gives her advice for simplifying your Christmas cooking

Kim McCosker is known for her four-ingredient series, but in her newest book she tackles a holiday that few go minimal for: Christmas. Kim McCosker shares secrets to 4 ingredient cooking

The woman behind the famous 4 ingredients cook books, is now branching out to help those with food intolerance's.

Kim McCosker has already released 33 cook books under her 4 ingredients banner.

Her latest addition is her gluten free, lactose free book – after a huge demand from followers.

A Current Affair spent a day with the queen of simple cooking, learning some new recipe's.

"We have over 750 thousand followers on facebook and every time i post a recipe, the first question i get is, is it gluten free." Mrs McCosker said.

So Kim listened to the calls for help and started to do her research. She found around one research which shows, one in 70 people have coeliac disease, with a huge 80 percent of those undiagnosed.

Coeliac disease is when your immune system reacts abnormally to gluten, and can cause bowel damage.

Kim realised there was a hole in the market for quick, simple recipe's that helped people with intolerances.

"I thought gluten free was a little bit of a fad, but i honestly believe it's not just plateauing, it is increasing in interest." She told A Current Affair.

Kim first released a gluten free 4 ingredients cook book 10 years ago, when ingredients like quinoa and kale didn't exist. She claims now it's even easier to eat guten and lactose free.

The new book includes more than 70 recipes’ all with just 4 ingredients.

While A Current Affair was with Kim, she whipped up a simple chicken satay, using just curry paste, peanut butter, coconut cream and chicken.

"Anyone could do that, and you know what, you don't need to be coeliac, you don't need to have any intolerances, it's just easy everyday food, for everyone.

Chicken orchard sammy

Transform the humble sandwich into a lunch box favorite. Note: Bacteria grows rapidly within the temperature range of 40 degrees F to 140 degrees F, so it’s always smart to add ice packs to a lunch box, placing them near the food meant to be kept cold.

Ingredients:

  • 1/2 cup shredded poached or roasted chicken
  • 4 dried apricots, finely diced
  • 2 tablespoons mayonnaise
  • 2 slices multigrain bread
  • Lettuce (optional)

Directions:

  1. In a bowl, mix together the chicken, apricots and mayonnaise. Use as a sandwich filling for the 2 slices of bread.
  2. Add lettuce for color and crunch (optional).
  3. Slice the sandwich before serving or wrap tightly and pop it into a lunch box.

Meatloaf cupcakes

Every time I see this photo, it makes me smile. Isn’t food just wonderful? It allows us to be so creative, easily turning a staple meatloaf into gorgeous cupcakes. The options are endless, but some of my favorite smuggling ideas are finely chopped celery, onion, grated carrot and beets with seasoned fresh thyme. What’s smuggling? Sneaking veggies into foods, undetected by kids.

Ingredients:

  • 1 pound ground beef
  • 1 egg
  • 2 slices multigrain bread, grated
  • 1/4 cup barbecue sauce, plus extra for basting
  • Warmed mashed potato as the “icing” (optional)

Directions:

  1. Preheat the oven to 350 degrees F. Line 12 cups of a muffin tin with foil liners.
  2. In a large bowl, combine the beef, egg, breadcrumbs, and 1/4 cup barbecue sauce.
  3. Divide the mixture evenly among the muffin cups. Brush the tops with a little barbecue sauce and bake until cooked through, 20-25 minutes.
  4. Remove from the oven and let rest.
  5. For the optional &ldquoicing,&rdquo spoon some warmed mashed potato into a large, sealable plastic bag. Cut off the tip of one of the bottom corners and pipe the potato onto the top of each meatloaf in a swirling motion to “ice” your cupcakes.

There are recipes for main dishes, sides, desserts, sweet treats, and drinks. Choose from Chocolate-Filled Crepes, Crispy Salmon Salad, Feta-Stuffed Chicken Breasts, Christmas Fruitcake, and many more.
